00:36- About Karin Luiten

  • Karin Luiten is a full-time culinary journalist. She’s one of the national Dutch newspapers.
  • Since 2005, she has been a full-time author of cookbooks with over 20 books to her name, and over 2,50,000 copies sold.
  • She is one of the very first social media cooks, educated in Amsterdam translations of French and Spanish, and also started her job working for the Dutch opera.

01:21- How do you make a shift from Opera to writing about food? How did that happen?

  • After working 7 years in opera, I got the “7-year itch” and wanted a career change. I briefly worked at a publishing company for magazines.
  • My true passion was cooking and drawing, so a friend suggested starting a food blog with my recipes in 2005 when food blogs were rare in the Netherlands.
  • While my blog grew popular, I wanted a cookbook published. Despite initial rejections for not being “famous,” I convinced a publisher, sparking my cookbook writing career.

18:53- How can you upgrade from a package to healthy food in a normal kitchen?

  • Adapt recipes based on what ingredients you have on hand rather than buying packaged mixes – substitute items you don’t have.
  • Cook simple dishes from scratch using fresh ingredients like vegetables, broth, and herbs/spices rather than relying on processed powdered mixes full of salt/sugar.
  • Use techniques that minimize hands-on cooking time like oven-baking instead of stovetop dishes that require constant stirring.
