[03:16] – How was the change from the big restaurant to becoming a businessman yourself?

  • The biggest hotel kitchen I’ve worked in was in Düsseldorf, with 55 chefs in the kitchen on three different shifts.
  • It was strictly organized, but in the end, you don’t know all the members of the team. It takes you months to know all 55 chefs in 3 shifts.
  •  That was the biggest change when I created my team with lesser people.
  • We are a team. We stay together, and we win it, or we lose it together. 

[08:04] – If you look at the restaurant business around the world, very few restaurants have a long life. Why does this happen in different parts of the world?

  • Different parts of the world have different reasons.
  •  Some years ago, I planned to open a restaurant in Hong Kong. The Hong Kong market has a very high rent to pay, and they increase it every three years if your business is good.
  • I feel it is sometimes good as it pushes you to be creative to sustain the business. 

[11:47] – Are people experimenting more with their food now?

  • I believe that we live in the richest in the western world and the richest century we have ever had for millions of years.
  •  We can have everything strawberries for Sylvester for New Year and asparagus out of season. 
  • You can have everything, which means people can try out everything they can. They can be creative, but sometimes I believe it’s much more creative to go back to the roots.
